Although, the bacon will be replaced by spinach( as I am a vegetarian that happens to enjoy spinach) =]  I put spinach in mine last time I made it, and it was tasty, so that should be a good substitute. I tend to cook mine a little longer than the recipe says, but it might just be my oven.  let me know how it turns out. :)
